The alcohol we buy through our Community Trade programme comes from Sao Paolo state, one of the first areas in Brazil to start growing sugar cane using organic methods. When the sugar cane reaches maturity it is cut, leaving the parent plant on the ground. These are replaced every five years to ensure healthy and productive plants.
Leaves are taken off the cane and scattered on the ground to decompose, returning nutrients to the soil. The canes are then packed up and transported to the processing plant, where the cut stalks are fed through a mill to extract the juice. The shredded cane pulp that is left is called “bagasso”.
The bagasso pulp is used to generate the energy needed by the processing plant. The extracted sugar cane juice is then left to ferment, before being heated to separate the alcohol from the water for the pure quality organic alcohol that makes every spritz smell all the sweeter.
